PRIMARY PURPOSE Implements best practices and standards for product and process to promote efficient production of consistent quality bread, roll or cake products. Manage production according to Key Performance Indicators (KPI’s).
This position has direct responsibility to ensure that all work activities under its span of control are performed with attention to the highest standards of food quality, safe processes, compliance with all appropriate legal requirements and a focus on continuous process improvement.
PRINCIPAL ROLES and RESPONSIBILITIES - Ensure that all work activities of direct and indirect reports are performed with attention to the highest standards of food quality, safe processes, compliance with all appropriate legal requirements and a focus on continuous process improvement
- Implement company standards for formulas, scaling weights, pan sizes, bag sizes, bake times, and all production control processes for bread, cake and roll products
- Train, oversee, and assess Production staff and overall bakery production performance
- Supervise entire Production operation
- Direct resources of plant and equipment toward the most efficient production of baked goods
- Coordinate with Quality Department to ensure compliance with uniform product standards
- Coordinate with Sanitation to ensure plants and equipment meet regulatory requirements for cleanliness and product safety
- Implement best practices to achieve company standards on controllable costs
- Promote safety through work procedures, and employee safety programs
- Ensure that consistent quality product is provided to Sales on a timely basis
- Ensure that all union contractual obligations are fulfilled
- Coordinate and implement company policies and procedures in all areas
- Ensure compliance of all Local, State & Federal regulations
- Ensure compliance of Recall Procedures

Requirements |

Requirements - 4 year college degree
- Completion of AIB Science of Baking correspondence course
- Completion of American Institute of Baking Residence Baking Course
- Thorough understanding of commercial high speed bakeries and production equipment along with the affiliated departments such as Sales and Marketing, Purchasing, Shipping, and Transportation
- Understands the functionality of ingredients with time and temperature in the baking process
- Operational Efficiency - Plans and coordinates use of manpower, ingredients and equipment to ensure efficient production of consistent quality products
- Engineering - Understands the unique equipment in a bakery production plant, along with operation of that equipment relative to the baking process. Ability to trouble shoot equipment to ensure optimum product quality and safety is achieved
- Accounting Policy and Key Accounting Practices - Understands production accounting along with budgets and profit and loss responsibility
- Team Dynamics – Empowerment, Collaboration, Motivation, and Enthusiasm - effectively leads, coaches, trains, and motivates people to follow established standards
- Human Performance Management – effectively monitor performance of direct reports and provide feedback to improve performance
- Setting and Achieving Goals - Successfully coaches, trains, and follows up with people to ensure production goals are met. Flexible in approach to supporting the needs of Sales and Marketing
- Business Relationships - Skilled at building partnerships within the organization and coordinating with support departments
