Job Description Field Director, Bakery Operations - Cake Summary: • Establishes and implements Company standards for formulas, scaling weights, pan sizes, bag sizes, bake times, and all production control processes cake products • Directs resources of plant and equipment toward the most efficient production of cake products • Coordinates with Quality Department to ensure compliance with uniform product standards • Coordinates with Sanitation to ensure plants and equipment meet regulatory requirements for cleanliness and product safety • Coordinates with Research and Development to build and launch new products and product changes • Coordinates with Supply Chain to ensure plant capacity is properly utilized for efficient distribution Leverages purchasing power with suppliers by working with R&D, and Purchasing • Promotes safety through work procedures, and employee safety programs.

Job Requirements Education /Experience • 5 Years production management experience at a level of Production Manager or higher Completion of American Institute of Baking Residence Baking Course or equivalent experience. • A bachelor’s degree in Food Science or Business is preferred, but not required Engineering - Understands the unique equipment in a cake production plant, along with operation of that equipment relative to the baking process. • Can trouble shoot equipment to ensure optimum cake product quality is achieved Accounting Policy and Key Accounting Practices • Understands production cost accounting along with budgets and profit and loss responsibility Travel • Approximately 50% travel. Must be able to travel approximately 50%. The location of this position is flexible; it can either be in Dallas or within a plant in the region (Emporia, St Louis, Los Angeles, Seattle, Chicago, Ogden or Kansas City). Industry-specific knowledge, skills & abilities needed Bakery Industry • Thorough understanding of commercial high speed bakeries and production equipment along with the affiliated departments such as sales and marketing, purchasing, shipping, and transportation • Understands the functionality of ingredients with time and temperature in the cake baking process.
